Brownie Cookies

Ingredients:

  • 1/4 cup unsalted butter

  • 1 1/3 cup semi-sweet chocolate chips (plus extra for topping, if desired)

  • 1/3 cup light brown sugar, packed

  • 1/3 cup granulated sugar
  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1/2 cup  all-purpose flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a microwave-safe bowl, melt the butter and chocolate chips in 30-second intervals, stirring after each, until smooth. Let cool slightly.

  3. In a mixing bowl, whisk together the brown sugar, granulated sugar, eggs, and vanilla extract until creamy.

  4. Gradually mix the melted chocolate into the sugar mixture until fully combined.

  5. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.

  6. Slowly add the dry ingredients to the wet mixture, stirring until just combined. The dough will be thick and sticky.

  7. Scoop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. For extra decadence, press a few chocolate chips on top of each cookie.

  8. Bake for 10-12 minutes, or until the edges are set but the centers look slightly soft (they’ll firm up as they cool).

  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
