When you think of eating ribs, you think smokey, sweet, maybe spicy. But trust me, this is something missing in your life. This fall off the bone rib recipe, with strong bold flavors had us eating the whole rack in one sitting! The flavor of the ginger, garlic, spicyness and sweetness, all comes toguether to form this out of this world bark, that will keep you licking your fingers while grabing another piece! This is a simple recipe, easy to follow, with ingredients from your pantry. Ready to blow people's minds?
Travel Story Time
We will always have Belize in our hearts ..
When my husband and I honeymooned in Belize, we stumbled upon an extraordinary opportunity—a cooking class where we learned to prepare the island's famous Belizean soup : Hudut, which is a rich creamy soup, made with fried red snapper, mashed plantain, and freshly made coconut milk. It turned out to be more than just a recipe; it became a sensory journey that tied us forever to the flavors and warmth of the country.
The setting was idyllic: a cozy outdoor kitchen surrounded by swaying palms and the rhythmic melody of the Caribbean sea. Our instructor Kimberly, a cheerful local chef, welcomed us with an infectious smile, her beautiful children, and fresh caught fish from the island. We were so eager to learn and help prepare everything!
Together, we got our hands messy preparing the green plantain, which required a lot of mashing with a bamboo pole to tenderize it just right. I took on the task with such determination that the chef joked I could pass for a true Belizean cook. As we diced, stirred, and simmered, we shared laughter, listened to stories of Belizean culture, and felt the weight of time slow under the island breeze.
The moment the soup was finished, its aroma was delightful. We gathered around a rustic table to savor the fruits of our labor, each spoonful a revelation of flavors dancing on the palate. I remember looking at my husband, his face lit up with joy, and feeling deeply connected—not just to him, but to this beautiful place.
To this day, the recipe is more than just steps to follow; it’s a reminder of the magic we found in Belize, made our honeymoon unforgettable!




Chocolate
Baking is one of the most satisfying things for me to make, specially when it comes to a special ingredient: Chocolate! There's something magical about how chocolate transforms a simple recipe into an indulgent masterpiece. Whether it's the velvety richness of ganache, the fudgy decadence of brownies, or the delicate crunch of chocolate-filled pastries, it adds depth and excitement to every creation.

Red Snapper
Red snapper is a prized fish, not just for its vibrant red skin, but for its mild, slightly sweet flavor and firm texture that make it incredibly versatile in the kitchen. Whether grilled, baked, fried, or featured in dishes like ceviche, it shines as a centerpiece for meals ranging from casual to gourmet.
Beyond its taste, red snapper is valued for being a good source of lean protein, vitamins, and minerals like selenium. Its delicate flavor allows it to pair beautifully with bold spices, citrus marinades, or creamy sauces, making it a favorite for adventurous and traditional recipes alike.

Quinoa
Here's a fun fact about quinoa: it's technically not a grain—it's a seed! Quinoa belongs to the same family as spinach and beets, and its seeds are what we cook and eat. This makes it a "pseudo-grain," often mistaken for a cereal grain because of how we prepare and enjoy it. Bonus fun? Quinoa comes in a rainbow of varieties, including white, red, black, and even purple! Each type has its own unique flavor and texture, making it a colorful and exciting ingredient to experiment with in the kitchen.

Healthy Snack:
Choco bananas
Ingredients:
12 wooden popsicle sticks
6 medium sized bananas
1 cup chocolate chips to melt (I used sugar free)
3 TBSP coconut oil
1 TBSP cinnamon powder
1 tsp salt
1/2 cup Pecans, 1/2 cup pistachio and 1/2 cup walnuts
Instructions:
Cut the bananas in half.
Insert the stick into the flat end of each banana and freeze them.
Melt the chocolate with the coconut oil using a Bain Marie, once melted mix cinnamon and salt.
Chop the pecans, pistachios and walnuts separately in a processor until just roughly chopped.
Cover each frozen banana with the melted chocolate mixture, immediately cover them with the nuts and take them back to the freezer.
Now you have a healthy snack when craving a little something sweet, and a fun surprise for your guests!
